The family of Ellen Gibbs will celebrate her life of 84 years at 3:00 pm on Friday, July 17, 2020, at Lake Ridge Chapel. She passed away on Sunday, July 12, 2020, in Austin, Texas. In support of the health of her family, face coverings are mandatory while attending the service and visitation. Gibbs was born on April 27, 1936, to Chester and Margaret Mobley in Blue Mountain, Arkansas. Ellen graduated from Amarillo High School. Ellen married Milton Gibbs on November 1, 1955, in Tucumcari, New Mexico, after traveling to New Mexico with Milton’s aunt Georgie and Georgie’s husband, Weldon. Ellen and Milton raised three boys from their marriage. Ellen worked as a librarian at Coronado High School in Lubbock, and after retirement, she enjoyed spending time with her grandchildren. Mimi was always eager to babysit her grandchildren. With a pitcher of lemonade waiting for them, she was still ready. Mimi supported her grandchildren by watching dance recitals and baseball games. Her grandchildren loved that their Mimi always had a stash of candy hidden somewhere! They just had to find it because she hid it well in end tables or behind the foil wrappers in the kitchen. Mimi LOVED chocolate! You have not tasted real fudge candy if you never had any of Ellen’s homemade fudge, she made at Christmas. Mimi also enjoyed her ever-present glass of Coke. She did not even mind if it got watered down, she still drank all of it! Ellen enjoyed cooking and teaching her recipes to her three daughters-in-law and many of her recipes are still served at family get-togethers.Survivors include; three sons, Marty (Mary Lynne) Gibbs, Mark (Evelyn) Gibbs, Matt (Libby) Gibbs; eight grandchildren, Kristine (H.C.) Schmidt, Kelly Gibbs (Brey Sykora), Kerrigan Gibbs, Katherine (Ryan) Havenhill, Austin George (Celesta) Gibbs, Sarah Conley, Megan Gibbs, J.P. Gibbs; five great-grandchildren, River Schmidt, Blake Sykora, Evan Sykora, Truitt Schmidt, Harper Conley; sister, Elizabeth Looney.She was preceded in death by her father, Chester Mobley; mother, Margaret Mobley; husband, Milton George Gibbs.The family of Ellen M.
